In modern kitchens nowadays we have a new kind of garlic, the black garlic. It is a type of fermented garlic and it gets its name from the colour of its cloves that appear black after an ageing process. Experiments have been conducted in 2007 by Japanese researchers and they have found that black garlic has the amazing ability to reduce the size of tumors in lab mice. The results and findings of the study have been published in a Global Science Book journal about medicinal plant science.
Quoting from nutritionist Velumani Deepapriya of the Singapore Nutrition and Dietetics Association, she said that fermented black garlic has greater health benefits than the common variety. “Especially in improving blood circulation and increasing antioxidant levels in the body,” she adds.
